
This taco soup is a satisfying and filling low-carb comfort food that you’d eat even if it weren’t healthy! This particular meal is a great fit for the lean and green meal on your 5 and 1 program.
Fortunately, most of the meals on the program are of the “done-for-you” variety, but the nightly Lean and Green meal requires a bit of forethought. But it also gives you the opportunity to satisfy your cravings for a specific flavor.

If you haven’t been following my journey, then you don’t already know that I had tried everything. My health was declining and I was really beginning to think that I would never lose the weight.

Taco Soup: the perfect low carb comfort food
The night I whipped up this taco soup, I was craving that yummy taco flavor. But, of course, I wanted to stick to my meal plan since I was seeing such great results! This low carb taco soup was just the ticket!
It’s the perfect creamy comfort food and is so filling for a low carb meal! The fact that you can make it ahead of time means that when it’s time to eat, you basically just .. well… eat. There’s really no additional prep needed and if you make it in the crockpot, clean-up is a breeze!
The science behind the Lean and Green requires you to be pretty exact since every single ingredient you put in your mouth is being specifically targeted to help you lose weight. Fortunately, it’s only for one meal per day!
You’ll also want to weigh each item using a kitchen scale. The more precise your measurement, the quicker the weight will come off! Admittedly, this can make the Lean and Green meal a bit tricky when you are just starting out (but then again.. that’s why this program works so well!)

1 Green | 1c (2.54 oz.) ceberg Lettuce

1 Condiment | 5.33oz low sodium chicken broth
About 1 Condiment | 1/3 tbsp. cilantro & 1/6 tbsp. taco Seasoning

What can you make with this low-carb soup to make a complete lean and green?
The only thing this soup is lacking is 2 servings of greens. You can easily add those in with a cup of steamed green beans! You could also take a few spoonfuls of the soup and sprinkle it over 2 cups of iceberg lettuce for a soup and salad combo!
Can you make this taco soup ahead of time and freeze it?
You can absolutely use this recipe as a Taco Soup Freezer Meal. After removing the soup from the crockpot, simply put it in a freezer-safe container and vent excess air. Do not add shredded cheese or fresh vegetables. Freeze for up to 6 months (quality may become reduced after 1 month.)
To reheat:
Remove soup from the freezer and place in a microwave-safe container. Reheat until soup reaches your desired temperature (at least 4-6 minutes). Top with cheese and lettuce. Do not refreeze.
Taco Soup

This delicious Taco Soup recipe makes 2 full lean and greens
Ingredients
- 2 lbs lean ground beef (95%-97% Lean)
- 4 ounces reduced-fat cream cheese
- 1 cup low fat plain greek yogurt
- 2 10-ounce cans of Rotel
- 1 Tablespoon of taco seasoning
- 1-2 tablespoons of Cilantro - fresh or dried
- ½ cup shredded low-fat cheese for garnish
Instructions
- Brown Ground Beef in a skillet over medium heat
- While meat is browning, place cream cheese, Rotel, greek yogurt, and taco seasoning into the crockpot.
- Drain grease off of meat and put meat in the crockpot
- Stir to combine with cheese and Rotel.
- Pour chicken broth over meat and cheese
- Cover and cook on low for 4 hours N
Need it quicker? Cook on high for 2 hours - Top with lettuce and cheese and remaining
- Before serving, stir in cilantro
- Ladle into bowls (6 servings) and garnish with shredded cheese and greek yogurt
